It´s a very delicate tempura fry first in which raw asparagus and thanks to the enormous pressure and oil temperature we get are very tasty and tender in just 30 seconds. We use those of a local asparagus producer.

The beans, if they are tender they are vegetables and if they are dry they are legumes. We offer them super tender and cooked in oil. Its delicate acidity and its smoothness, accompanied by this surprising yolk, will make us enjoy a very soft and natural dish.

Mild Kangaroo with pumpkin compote25.00 €
We use the lower kangaroo loin, brought in from Australia, with a delicious, very tender meat. We roast it immediately before serving in our charcoal oven and accompany it with a marmalade we make with butter and pear, simmering in a pot for four hours. The balance of flavors between the venison and the pumpkin compote is extraordinary. We recommend this dish to lovers of the exotic.
